I had to work for most of the afternoon on Saturday and had a completely free day, for once, on Sunday! If you have read my blog before, you know I am a HUGE Pioneer Woman fan. She has a Saturday morning cooking show on the Food Network and yesterday was the first episode of Season 2! Of course I watched it when I was hungry and her flat apple pie looked amazing! I decided that it would make a great dessert that night. The dough was super easy to make and the filling was even easier. </span><br />

<span style="color: blue; font-family: Georgia, "Times New Roman", serif;">Sunday, I thought I would make Tomato Pie for lunch but it ended up being a great side dish for dinner. Paired with some grilled chicken and Greek pasta salad, it was so yummy! I originally got this recipe from a Southern Living magazine.</span><br />

<span style="color: blue; font-family: Georgia, "Times New Roman", serif;">First, make the dough. The ingredients are super simple. Stir together 1 1/4 cups all-purpose flour, 2 teaspoons of baking soda and 1/2 teaspoon of salt together. Then add 1/2 cup shortening and 1/2 cup of sour cream. Fork until dough is combined. Put into a plastic bag and roll into small disk. Refrigerate 1-24 hours.</span><br />

<span style="color: blue; font-family: Georgia, "Times New Roman", serif;">Once dough is chilled. you can assemble the pie! You will need to cut 2 large tomatoes into 1/2 inch thick slices, place on paper towel and sprinkle with salt. Let them sit for 30 minutes. </span><br />

Finish with a mixture of 1/2 cup mayonnaise, 3 chopped green onions, 2 tablespoons of chopped fresh basil and 3/4 cup of shredded Parmesan Cheese. </span><br />

Lexie loves her cookies. I was holding her today and she saw a cookie on the chair and literally nose dived for it! She got it and then just sat on the chair with it in her mouth and wouldnt move. This went on for atleast 4 minutes. Is it really 2012? I think that is the most common expression lately. As well as, 'Can you believe its already 2012?' 'I cant believe another year has gone!' 'Seems like New Years was just yesterday...' I actually cannot believe that it is already a new year but I am very excited for 2012! I have lots of big plans in store which only makes me more excited to get on with the year!<br />

I have New Years Resolutions just like everyone else although, I know better than to make some crazy, off the wall, unattainable resolutions. Instead mine are quite simple. Last year I made one resolution: No Soda for ONE year. At first, it was very hard to not ask for a coke when eating my favorite Mexican food or filling up my drink at work with soda because I had no time to eat. My taste buds have even changed from no soda for a year! I use to be a Sweet Tea FANATIC! Now, all I can drink is UnSweet Tea. Since I made it through a long year of no soda, as simple as that seems. I know I can stick to other resolutions I set for myself.<br />

<strong>To Buy a Lottery Ticket Every Day!</strong> Some people would say that this would be a waste of money, but why not! With a chance every day to win money that would help my future, I say GO FOR IT! Let me know if I need to buy yours as well.<br />

<strong>Blog More Often.</strong> I enjoy blogging but I found that its hard to turn my computer on when I get home from work or have a free clear moment during the day. I plan to blog about everything and anything at least 5 times a week. This way I can share all the funky, weird, quirky things that happen in my day to day life that no one would believe.<br />
<br />
<strong>Go to a Synagogue at least Twice a Month:</strong> I feel like I don't know much about my religion except for the basics. I want to learn more, know more and connect more. I think this is also a great way to meet people and engage on a different level than work or friends.<br />
<br />
<strong>Add more Physical Activity into my Daily Life:</strong> I have been lacking here for the last 6 months. I have given up because work has gotten in the way or social functions are more important. I want to go back to taking 'me' time and walking for an hour or exercising in the park. Too many excuses last year that will not be repeated. <br />

I also made sure that each lady was off last night no matter if they were going or not! That meant an All Boys Night at the store. Finally, we all decided to bring food and drinks and it was FREE! Ali, Carrie and I decided to join the Peachtree Road Bootcamp for the next six weeks. My first day was last night and spent the night at Ali's to attend this mornings class. After both classes, I can honestly say I might not be able to walk tonight. It was a small feat to just get to work and move from chair to chair all day. Last week it was FREEZING! This week, its cold in the morning and night and super warm during the day so soup has been on my mind. <br />

This week my parents went out of town and I am watching the house, my grandmother, the dogs, my sister(for the most part) and picking up the baby my mom picks up for a friend and takes to daycare three times this week. ONTOP of working 40 hours. It's only Tuesday and I am exhausted. Since I am in charge of making dinner this week, I made Loaded Baked Potato Soup. This is a recipe I got from a Pampered Chef Magazine and you are suppose to make it in the microwave. Instead, I threw everything in the crock pot and cooked it all day. <br />
<br />
Below is the recipe the way it reads<br />
Ingredients: <br />
<br />
3 Large Baking Potatoes<br />
3 1/2 cups milk, divided<br />
4 oz. cream cheese, softened<br />
2 tbsp butter<br />
2-3 green onions with tops, sliced<br />
4 oz. sharp cheddar cheese, grated<br />
1 1/2 tsp salt<br />
1/2 tsp coarsely ground black pepper<br />
<br />
Optional toppings such as chopped cooked bacon, sour cream or steamed broccoli florets<br />
<br />
Directions: <br />
1.) Slice potatoes in half lengthwise; place in dish. Pour 1/2 cup of the milk over potatoes. Microwave covered, on HIGH 11 minutes. Remove dish from microwave. Move center potatoes to ends of dish and outer potatoes to center. Cover; microwave on HIGH 8-11 minutes or until potatoes are easily pierced with a fork. Remove dish from microwave. Coarsely mash potatoes.<br />
<br />
2.) Meanwhile, whisk cream cheese until smooth. Slowly add remaining 3 cups milk, whisking until smooth. Add cream cheese mixture and butter to dish. Microwave, covered, on HIGH 3-5 minutes or until mixture is hot. Slice green onions.<br />
<br />
3.) Carefully remove dish from microwave. Grate cheddar cheese over soup; add green onions, salt and black pepper and mix until cheese is melted. Serve with toppings is desired.<br />

This is a great recipe! I highly recommend it!<br />

There is just no other way to say it. It was birthday week, filled with events. Then finally last Sunday, I woke up sick as a dog. I preceded to go to the Taylor Swift concert and sing my little heart out, which only made my sickness even worse. On Monday, I was preparing to head to Chicago for two days for work. We were going to visit 4 new Chick-fil-A's that had opened within the year to see what things they were doing in the marketing department that were working. I arrived at the airport on Tuesday morning (thanks dad!) to meet Bethany, Marketing Director for the Hapeville Dwarf House. We boarded a smooth and quick flight to Chicago's Midway airport. The flight happened to be pretty quick because I was able to get on my laptop and knock out some work and talk to the cute guy next to me who happens to live close by in Georgia.</div><br />

Or driving in a rental car and getting very lost. We headed to the city to check into our hotel and then off to two stores. Our first store was the Wheaton FSU which was fun and nice. The operator was great. I had a dream of going to Harpo Studios and taking a picture outside. Needless to say, after about 30 minutes of mindless driving around the city because we were so lost, we headed back to the hotel to valet the car and head out on foot! We ended up at Grant Park and took a bunch of pictures. </div>We ended up getting even more lost on foot, on our way to dinner. Who knew one road would have 3 levels!! We ended up literally next to the river that runs through the city. At least we walked off the pizza we were about to consume! Finally we found the restaurant and definitely stayed awhile!<br />

It was only .70 miles from our hotel and was a beautiful morning to walk around the city. After that quick visit, we checked out and headed to the Orland Park FSU which had been opened almost the longest out of all the stores. We visited for a bit and found out that the only way to enjoy a Chicago Dog was to go to Portillo's. While I prefer my Starbucks over most places and homes, I do love a good cup of coffee in the morning and sometimes in the afternoon. I also love my New Jersey Housewives! Which is where I got this great Cinnamon-Hazelnut Biscotti Recipe from! Teresa, from RHONJ, came out with a cookbook last year and I found this recipe and love, love, love it!<br />
<br />
Ingredients<br />
<br />
3 large eggs, room temperature<br />
1 cup granulated sugar<br />
1 teaspoon vanilla extract<br />
1 teaspoon ground cinnamon<br />
2 3/4 cups all-purpose flour<br />
3/4 teaspoon baking powder<br />
1/8 teaspoon salt<br />
3/4 cup toasted, peeked and coarsely chopped hazelnuts<br />
1/4 cup confectioners' sugar, for kneading<br />
<br />
1. preheat oven to 350 degrees and line a large baking sheet with parchment paper.<br />
<br />
2. Whip eggs, granulated sugar, vanilla and Cinnamon in a large bowl with an electric mixer on high speed until thick and pale yellow, about 3 minutes. In another bowl, stir in flour, baking powder and salt together. Stir into the egg mixture to make a stiff, sticky dough. Stir in the hazelnuts.<br />
<br />
3. Stick in fridge for 30 minutes to chill. <br />
<br />
4. Sprinkle the confectioners' sugar over the work surface. Transfer the dough to the work surface and knead gently until the dough is cohesive and loses its stickiness.<br />
** This is where after making this recipe several times, I change the recipe. <br />
I shape my dough into a large rectangle about 10 inches long and about an inch think. Then I cut across the middle of the dough and then cut strips about 1/2 inch wide. <br />
<br />
5. Place them on the cookie sheet and back for 20 minutes!<br />

In order to get any of these items at this price, customers had to come in dressed in that particular decade. All employees got to dress up and I even partook in dressing up for 50's, 60's & 70's Day! No pictures though because I am sure I looked ridiculous.<br />

Punch a hole in the tops or sides with a metal hole spike (you can get them at Home Depot. Turns out I got my dad a set for Hanukkah last year. Hot glue the tops and the bottom of the boxes together. Measure the box, take 1 inch away from the height. Divide by 3 and that is how big your squares need to be! Cut the square out of foam sheets you can get at Hobby Lobby. I love to read and as long as I have books waiting on hand, I will read and read till I've read them all. My favorite books to read are extremely cheesy, the Chick-Lit kinds. But they are easy reads that keep me entertained. So at the end of April, I went onto Amazon and purchased 10 books that were left from the collection of authors I enjoy. Starting at the beginning of May, I put the books in order and started to read. Over the past 4 months, I have read over 23 books and I have 5 more I'm starting this week. I have read everything from girly books to Bristol Palin's new one to Safe Haven and The Help. Reading has definitely made the summer go by, given me something to do at the pool while working on a tan and allowed me to take moments out and just relax with a good book! In honor of football season. I will be making Buffalo Wing Dip for my game watching food! I got this recipe from our office manager, Angie and it is my favorite!<br />

Buffalo Wing Dip<br />
<br />
4 Large Cans of All White Meat Chicken in Water<br />
1 Bottle of Nature's Fresh Ranch or Blue Cheese Dressing<br />
1 Bottle of Frank's Red Hot Sauce<br />
2 - 8oz. Packages of Light Cream Cheese<br />
1 package of Monterey/Jack Cheese<br />
<br />
Drain and shred the chicken in a bowl. Pour the bottle of hot sauce in and mix till chicken is covered. Let this soak while you prepare everything else. <br />
<br />
In a saucepan, add the ranch dressing and 2 packages of cream cheese (Room Temperature) together and blend. Use whisk to combine until creamy. <br />
<br />
In a 13x9 pan, pour the Chicken/Hot Sauce mixture on the bottle and spread evenly. Take the Ranch/Cream Cheese mixture and spread on top of the chicken. <br />
<br />
Turn the oven to 350 and cook for 25 minutes. Take out and pour the Monterey/Jack Cheese blend on top of the dip and let it cook for 5 more minutes. <br />
<br />
I love to eat mine with celery but lots of people use carrots, chips and crackers! Enjoy! <br />

One idea was from a blog I read about having a party at a local fencing club. So I googled Fencing Clubs in Cherokee County. I mean we are in the sticks! I was fairly certain that rednecks don't like to 'Fence'. Well I was WAY wrong! Cherokee Fencing Club popped up and we were in business! One phone call and a meeting later, I had convinced this really nice guy of my crazy plan. We would clear out part of the restaurant and they would come and setup and teach the kids (or kid like adults) how to fight with light sabers. So that was the big event settled, now was decorations and the FREE giveaway. We would have face painting and free ice dream sundaes for everyone. <br />

My mom works with me as my right and left hand, So Friday night before the big event, it was time to do the major decorating. We hung black fabric from the ceiling and in between the fabric we hung star cutouts, planet cutouts and much more. All from the School Box! My favorite place ever and some of the nicest people. We were at work till 4am which was crazy and back at work by 1pm the next day.<br />

For the last few weeks we have had multiple family members visit us. The last guests were my Aunt, Uncle and their two daughters. Needless to say, instead of going out to eat every night, which is very costly and a hassle with 10 people, one who is an 82 year old Alzheimer's patient. So my mom and I started to cook/bake away. Then my sister came home and we baked some more! We made Chocolate Chip Pound Cake, Vanilla Pound Cake, Caramel Apple Cupcakes,Doubletree Chocolate Chip Cookies and Banana Bread and plenty more... <br />

My sister loves to bake and one days wants to own her own bakery. Every time she comes home she makes sweet treats and lets us take them to work and give them to friends. So for her 22nd birthday, I made her a cookbook from taste book. It is the coolest site! Just get on, register and pick your book. You can enter your own recipes and once your done, you just publish! I picked a cupcake cookbook for her and added 50 of her own recipes to the 50 it provided. One of the recipes that came with the cook book was a Caramel Apple Cupcake Recipe and from the feed back it is definitely a fall hit for any party. <br />

Caramel Apple Cupcake<br />

Ingredients <br />

1 (18 ounce) packages butter recipe cake mix (plus the ingredients to prepare the mix) or 1 (18 ounce) packages yellow cake mix ( plus the ingredients to prepare the mix) <br />
1 cup dried apples, chopped Caramel Frosting<br />
<br />
3 tablespoons butter <br />
1 cup light brown sugar, packed <br />
1/2 cup evaporated milk <br />
1/8 teaspoon salt <br />
3 3/4 cups powdered sugar <br />
3/4 teaspoon vanilla <br />
chopped nuts ( for garnishing) <br />

Directions<br />
<br />
Preheat oven to 375 degrees, and line 24 (2 1/2 inch) muffin pan cups with paper liners. Prepare cake mix according to package directions. Stir in apples and spoon batter into prepared muffin cups. Bake 15-20 minutes, or until toothpicks inserted into centers come out clean. Cool in pans on wire racks for 10 minutes, then remove from pans and cool completely on the racks. For Caramel Frosting:. Melt butter in a 2 quart saucepan. Stir in brown sugar, evaporated milk, and salt. Bring to a boil, stirring constantly; remove from heat and cool to lukewarm. Beat in powdered sugar until frosting is of spreading consistency. Beat in vanilla until smooth, and then frost cupcakes. Sprinkle cupcakes with chopped nuts for garnish. <br />
